Pineapple Yoghurt Loaf

500 ml cake flour (2 Cups)
5 ml baking powder (1 tsp)
5 ml ground nutmeg (1 tsp)
1 ml salt (pinch)
100 g butter
(scant ½  Cup)
250 ml brown sugar
(1 Cup)
410 g canned, crushed
Pineapple, well drained
(1 can)
(I also add 1/2 cup Saltanas)
1 large egg
5 ml bicarbonate of soda
(1 tsp)
250 ml Plain Yoghurt
(1 Cup)

*    Preheat oven to 180 C (350 F)
*     Sift flour, baking powder,
      Nutmeg and salt together.
*    Rub in the butter well, and
      Add in the sugar and
      Pineapple.  
 *   Beat the egg, bicarb and
     Yoghurt together gently,
     And add into the flour
     Mixture.
*   Pour batter into a greased
      Loaf tin and bake for
      50 minutes.
*   Cool for 10 minutes before
      Removing from the tin.
      Yield : 1 Loaf
      This is a moist loaf and is
      Suitable for serving as a
      Dessert, accompanied
      By whipped cream.
